The fruit for the Deano Sangiovese comes from the oldest Sangiovese Vines in the Clare Valley, which are dry grown and produce low yields with amazing quality. Eldredge have now mastered this tricky variety. Slightly higher in natural acid than other varieties, it is a wonderful food wine and suits most styles and cuisines.
The grapes are picked and go through a whole bunch ferment in open fermenters, which are hand plunged twice a day. After ferment finishes, the grapes are basket pressed and the juice goes into new and older French oak for 8-12months.
Recommended to drink now or would cellar well for 5-8 years.
